Lobster Roll
LOBSTER ROLL

It is certainly easiest to buy lobster meat, fresh or frozen these days, but you may choose to cook your own. And don’t worry it’s not difficult. Despite what someone once told me, they don’t scream when you set them into the boiling water. Once my family moved to the east coast we often had lobster races in the back yard, when we were cooking multiple smaller lobsters. But one Christmas Eve, I remember cooking a single 13-pounder for lobster Newburg. I’ve always hated picking lobster or crab and I figured it was easiest if I just had one big one to manage. It was delicious!


When ordering a lobster roll, you should know one thing: there is a difference between a MAINE lobster roll and a CONNECTICUT lobster roll. The MAINE lobster roll is generally made with mayonnaise and may include celery and green onions, while the CONNECTICUT lobster roll is generally just dripping with melted butter. Either way, it’s delicious.
For those on the west coast, Dungeness crab also makes wonderful rolls. My favorite out there, however, is a grilled cheese with crab!
